Damn,

And all I was trying to figure out is whether is made sense to keep the stock ignition switch, or go with a simpler toggle switch configuration.

Jason, it doesn't matter, both will start your car. It is only a matter of preference and convenience. Don't forget that the key switch has several different ignition positions, some have the accessories on, some go off when the key is twisted to start, and you need to insure you plan for that.
