I asked about this a while ago but not much response....
I find that if I hold the brake at a stop light, rather than using the "brake hold" that I feel the pedal sinking...

It's a 2019 S 17,000 miles and its Night (dark) Blue Metallic with dark windows ... (nasty)

+1 for the fluid change.
I boiled the fluid in my 911TT doing some very spirited driving up and down Mt Palomar CA.
Pedal sank to the floor but recovered. Changed fluid when I got home. Problem gone.

Start with the fluid change, but could also be the master cylinder failing and leaking internally at the piston so you won't see any fluid on the ground.

Yes, my opinion as well.
You're due for a brake fluid flush - 2 yr. limit reached.
Also, a sinking pedal sounds as though the pressure is not being held and that relates to master cylinder seal(s).
I'd go with brake fluid flush first and see if that fixes things.

My Cayenne brake pedal will sink as I continue pressure, it is the hold feature sensor kicking on. Dunno if it is related, but that's how mine works. It holds when you lift your foot and will hold the spot until you touch the gas. For stop and go traffic and hill stops.
