I set my tires with a good gauge. In the morning when it's cool out. Before the first drive. I only use the on board for trending. To see if a tire is loosing air. I don't know how accurate the tpms is. And don't really trust it. I do however have all the parameters set up correctly. It's close to the gauge I use.

Easy enough, use the same website for that year.

35 in the front? That’s very low, why so low? Are you running 295/35 r21 tires? The 44 in back is what the tpms says it should be but 35 is about 5psi too low

The tpms is set to 21r half load excess 100mph and it’s saying 41 front 48 back is too high, that it should be 40 front and 44 back

And in typical Porsche attention to detail, they even specify in the owner's manual the optimum temperature that your tires should be checked cold:

Tire Pressure for Cold Tires 68 °F (20 °C)
These tire pressures apply only to the tire makes and types approved by Porsche.

Look at the chart posted just above your post. Partial load recs are 37/42 for that size tire on a GTS.

Why would you follow the TPMS and not the actual manual?

Was the TPMS set for partial load below 100MPH? If not - it's still showing the full-load, 100MPH+ pressures,
