Anybody know of a indy mechanic in the Nashville area that can be trusted to do my coolant pipe upgrade? Needs to be done and I just don't have the time, and the dealer wants big $$$!

Depends upon how far you want to drive. I know of a very competent shop in Madisonville, KY. But that's 150 miles, so hopefully you'll have luck closer to home.

When I lived in Christian County, I took my Mercedes to Pro Exhaust on Ft Campbell Boulevard. Owner Bob (Purdy I think) is a Porsche enthusiast. I'd be confident taking my Porsche to him. His shop services performance vehicles in general. But when a Porsche comes in, Bob usually gives it his personal attention. I've since moved, and am closer to Madisonville now. There I found TC Motoring. Owner Tom Branson is an ordained minister, so tends to church business first. But he's at his shop every Monday 0800-1700, Tuesdays after 1600. Other days by appointment only; (270) 825-3237. If Tom ever retires, I'll drive the extra miles and go back to Pro Exhaust.

I can second Bill's recs. with the caveat that Renntag isn't very interested in working on Cayenne's (personal experience). They are more of a performance shop.
I spoke with P&A regarding my coolant pipes and they didn't strike me as especially knowledgeable about the Cayenne. Again, personal experience. Their price was within 10% of the dealers.
In the end, I decided to let the dealer do it for the following reasons:
1. Cost was essentially equal with my PCA parts discount at the dealer.
2. Factory warranty on the parts.
3. Loaner vehicle.

I'm not surprised by Laurence's experiences. We actually have a very good dealer here in Nashville. Prices might be a little higher than some indy's would charge but very reasonable as far as Porsche dealers go (from what I've read others have had to pay at their dealers).
I did my own coolant tubes so I didn't get the pleasure of pricing this job out.
