Yes, you can connect an aftermarket amplifier directly to the speakers already in the car (the method you chose....cutting off the amplifier harness connector or making a mating interface connector....is up to you).
No, you can not install an aftermarket MOST headunit to interface to the steering wheel controls and Bose (MOST) amplifier; as I don't know of a unit that current is on the market that meets those requirements.
(Now, Larry on the other hand, he could have interfaced just about anything into the Cayenne's infotainment network, but since he's dead (R.I.P. ), that's not really an option anymore.
