then.....if/when you have the means - add a 991 gt3. Preferable a 2015 or 16.

Considering that You understand the full differences between these 2 cars, simply the fact You're even contemplating the 991 GT3, tells me You should go for the newer model.

i have a 2010, so my bias is clear. that said, my main concern with a 2014 GT3 would be the engine debacle and how those cars will be seen in the future (whether unfair or not).
if i was going to go for a 991 GT3, i'd personally be looking for a 2015.

Drive them both. The 991 is MASSIVE - it feels so much bigger, and has less than half the tactility of the 997. But, engine sounds more willing to rev, more responsive dynamics, and faster for most mortals if that's what matters. 991 feels like a fast BMW (refined, usable, unflappable), 997 feels like a race car (generally pissed off, robust, ready to teach you a lesson)

2010 997 GT3 - They are harder and harder to find. You can always find a 991 GT3 down the road.
