NItto just needs to release a proper rear for you guys and you'll be set, it really is the ultimate DE tire, not great for lap times, but good enough pace and great life.
Sounds like the Nitto's would make a great practice tire...

What ride height do you guys like to run on the RS? On my Vette & Ferrari Challenge car, lower is better...

This is a good question as it hasn't been discussed as much as alignment, tires etc.

The 2 philosophies seem to be for track day cars:
1) keep the stock rake but lower the car 10-15mm at all corners
2) similar to #1 but lower the rear more to further increase weight over the rear wheels to increase grip during track out

I don't think any of this really matters unless you are going for the last few 10ths, but I had a well known pro tell me to do #2 and that is what I did.

When you look at pictures of some cup cars I think it is clear they drop the back more as usually the rear tires seem burried up in the wheel well whereas the fronts do not - and given what the pro told me is done, I think this seems correct - ie reduce the factory rake by 5 to 10mm - but overall, lower the car 10-15mm.

Since you seem to be doing a real track setup, go ahead and order the cup front lip for added aero benefit and then put the rear wing up to the higher attack angle - add some of the Orbit front dive planes and a rear wing wicker and you will be all set.

When you get this far, you may as well go the last few steps and:
- order all the suspension mono ***** from RSS, GMG, etc
- get 200cell cats with new headers
- do a side delete exhaust setup for weight savings
- gut your front trunk (only takes 10 minutes)
- order a Guard LSD
- re-gear so you can keep up with the 4liter RS
- get a quick release steering wheel to remove the airbag
- get a proper track seat
- put in the Motorsport ABS so you can out brake your fellow DE driver on bumpy tracks

Few more things from a servicing your GT3 track car:
- the Pressure Plate in the 3.8s have had issues, if this car is going to see a lot of the track then may as well order the up-rated PP from the 4.0
- order the Motorsport studs to replace the OE bolts that secure the calipers - the bolts are steel, your uprights are aluminum - trust me you will eventually strip them - put the studs in now to prevent this from ever happening
- order the caliper piston puck retaining clips from Orbit

Get someone who knows the Center Lock mechanism very well to show you exactly what has to be done each and every time you change wheels - do it properly step by step every time.
