Sport chrono does not do any engine mapping on non-GT cars. It adds no hp or torque. It is not a performance option.

On a manual transmission, non-turbo car you will not go any faster, stop any shorter, turn any quicker, or enjoy any other measurable performance difference with the sport mode on or off.

With PDK it's necessary if you want to have additional shifting profiles, which is worth it.
With a Turbo car you gain an over boost function which does influence performance.

And, as others have already mentioned, it truly serves no purpose on the GT3 because you still get the sport button even if you skip the chrono option. So even if you prefer the twitchy throttle you can get it without having to have the wart on the dashboard.
