How @650kid did it. When I got my car, Peter at Universal AutoSport PPI it and mentioned he had done 5 or 6 conversions. Not cheap but sounds like better than the aftermarket options out there.

@650kid Do you not regret your decision at all? I am seriously thinking about swapping my scud for as I LOVE manual so much it's insane.
Would you suggest it after doing it and what's the cost for all OEM?
I know EAG was about 30-40k, but apparently they were a NIGHTMARE!
Normal guy super car does it for 20-27k depending on if you replace clutch or not. And I believe he uses Dr. S conversion kit: https://gatedconversion.com/ ($13,000)

What's interior room like? I'm 6'2", 225lbs...fit fine in my 997 GT2 with foldable buckets (seats and headroom). Is 360 CS tighter? Everything about the car feels like what I'm looking for as far as complimentary to current fleet, and 20 years later the shriek of one of these new (2004 or 2005) passing me on the interstate is still seared in my head as the greatest automotive sound of all time.

You do note that you have GT2 buckets and fit which is good. While I fit in 997 GT cars with buckets that don't have a sunroof like your GT2, my knees touch the steering wheel since the seating position is higher in the buckets than in the standard seats.
Best of luck to everyone looking at the 360CS. Probably one of my favorite Ferrari's along with the Scud.

As I recall, the CS came with three sizes of buckets and most people ordered medium. I see a picture there of a Rossa Corsa no stripe. I wonder if it was my old car. If the Carfax shows Ferrari of Beverly Hills as where it came from I bet it is.
EDIT: The interior is roomier than a 997 GT3. It's a bigger car. If you want a spare key I think I bought one. New and unprogrammed. I also ave the Challenge Stradale skateboard I was going to put up on BAT or Pcarmarket

I just drove a friends manual swapped CS. It is fantastic. He also has a 997.2RS and we can't say which car is definitively better but the gated CS is such an experience.
Interior room on the 360 is great. With oem buckets or any aftermarket it can fit a big guy. I am 6'3" with a long torso and feel comfortable in there.

Echo the sentiments above re: fit. Much more headroom in my scud (basically same chassis as cs) than in any 911 I have ever driven. I have the size large seats. I literally have inches of room above my head. I’m 6’4”, also with a long torso (only 32” inseam if that gives you an idea). Scud is also much wider (and of course no sunroof taking up valuable real estate either).

Thanks all, that's refreshing to hear. Obviously would love to sit in one first, but it sounds like I should be fine. My knees get close to the steering wheel in my 997, but it's not really an issue, and I've made it 8 hours straight (though, probably not something I'd want to repeat).
