Both sets have seen some track use. I do not believe they are the Anthracite...Gloss Black comes to mind when looking at them and browsing O.Z.'s pictures

No I couldn;t say, although I wouldn't imagine much as they are in pretty good cosmetic shape. Typically i'd see a good bit more wear on the finish of those that had been used on a pretty consistent basis. I inspected the wheels thoroughly and found no cracks or any other structural issues.

Will the 12's get under the rear of a 7.1 narrow body?

If memory serves me right, the 997.1 GT3 OEM wheels are the follow size/offsets
19x12 ET68
19x8.5 ET53

That being said, the fronts of these wheels will fit the exact same but the rears would be pushed out towards the fenders 17mm. Might be worth taking a measurement on the gap for your rear wheels to fenders to see how much room you have, keeping in mind that additional camber can offset some of the gain.
