I grew up in Park City and one year I hit 3 deer. My poor little VW rabbit looked like a golf ball in front. And no.....game meat is gamy as is, let alone when it gets splattered.

Wow. I ran over a deer a couple of months ago, guy 300 yards in front of me hit it first. Luckily I just went over it, no damage.

Well, since you asked, the abridged Bio101 answer. Energy comes from the sun. Plants use said energy to grow. Deer eat plants indirectly harvesting energy. Predators eat deer further, indirectly harvesting energy. In the past (and maybe in many other parts of the world), man eats deer surviving on meat (muscle, sinew, organs) able to be grown from energy supplied by the sun. Further, Deer eat plants, this allows "space" for other plants to grow impacting biodiversity. it is terribly cliche but Web of Life and all. Deer are not Keystone species but removing/limiting their predators allows their rate of intrinsic increase to skyrocket (oops, sorry, that Population Ecology 101)

An uncle of mine hit a moose going about 80mph. His cadillac scooped it up over the hood and it came through the windshield, missed him by inches and ended up in the back seat. Now that was a write-off.
Good luck with the insurance company. We'll be interested to know who you're dealing with and whether you receive proper value, particularly given your superb modifications.

Public service announcement - Check your policy for value of your car. It is in there. Make sure your happy with that number. If not, get your car appraised, and have the number documented in your policy.

I hit on a moose once, ended up on my back seat. Can't say the car was a write-off, but it needed a serious clean-up afterwards...

- The cost of these accidents results in over $1 billion dollars in vehicle damage.
- There are around 175-200 fatalities every year and 10,000 injuries.
- The majority of these accidents occur between October and December, but can happen year round.
Roadside trees, ditches and oncoming traffic are much more dangerous than a deer.
Here in NC recently, a driver killed a man mowing his lawn when the driver swerved to avoid an animal in the road and plowed over the homeowner on his riding mower. The moral of the story is that most times it's safer to hit the animal.
On side note, I'm very surprised that the OPs rollover bars deployed in a deer strike. I wonder what caused that to happen?
OP, did your car yaw wildly or did any of the wheels leave the pavement when you had the accident?

The car felt controlled through the impact. As for the roll hoops, I think its a response to a significant impact while the roof is down. That's my best guess.
