Rock solid 200*F on oil and 175*F coolant, but I'm very special.

Typical. The oil is in contact with the hottest areas of the engine so it heats up a bit more when the engine is being worked harder. As soon as the engine gets a break the oil temp drops again.

I keep a log of my oil and water temps on every drive. Outside temperatures generally range somewhere about 70-90F during most of these drives. Humidity level are really low...like 15%.
Normal driving (which means not going beyond about 4000 RPM)
Oil : 190-200F
Water: 175 F
Spirited driving:
Oil : 210-215 F max
Water: 175F
I do have a low temp thermostat.

Hate to tell you guys but the analog gauges are not accurate. The water temp especially will be stuck at 175 but it is more like a on off switch. Get any of the numerous apps and a OBD2 cable and you will see oil and water temp difference between true and what Porsche has "tuned" the dashboard gauges too.

yeah water gauge is somewhat of a dummy - it only registers 3 positions basically: off/nothing, "normal" and "too hot".
oil is slightly better but is still not entirely accurate. that being said, mine shows about 210 during normal driving and 250 on track.

160*F T-stat, 3-rd rad, fresh coolant, water wetter and Millers CFS 5W-40 NT in the sump.
My oil temp gauge barely ever moves above 200F mark. Those rare occasions are typically associated with attempts to keep up with certain M3 owner who used to frequent 996 RL forums in recent past.
At 220*F (105*C) M1 0W-40 is already in 30 grade viscosity, just sayn'....

In warm weather while driving slowly in traffic I guarantee coolant temps(in a 997.1) rise to well over 200 Deg F.

Apparently Porsche got way too many questions from owners about what the appropriate water temperature should be in a M97 / M96 engine so they dumbed down the gauge. As a result it's anyone's guess what the coolant temperature really is. When it reads 175ºF it is usually over. Unfortunately, if you do start to get really hot you get no advanced notice--until it's too hot and then the needle bounces over into the "too hot" side.
With two radiators it's quite common to see oil at 215-225ºF

Checked my water coolant temp with obd2. Reached a max of 215 at 90 degrees outside, and was around 200 to 210 at cruising speed. Gauge firmly showing 175. Brand new coolant and water pump and low temp thermostat.
I wish the gauge was accurate, not 40 degrees off.

Here in the desert with +100 degree days my oil temp approaches 250 depending on throttle input or how long I'm stuck idling in traffic but I've never noticed it go over that.

The trust is that just cruising around temp is more like 200 degrees.
This is coolant level so it fluctuates much quicker than oil temps.
On the track I typically see oil temps over 225 but coolant temps just about 200 degrees. I attribute this to high air flow around the radiators and high rpms.

did 1000 miles last weekend, and the coolant gauge was pegged at 175. OBD2 reader said it was actually about 190 most of the time.
oil was reading between 200 and 215, I never checked it on the OBD2 reader.
I did get the oil temp over 225 on a warm day at the track during some quick parade laps.... 3rd radiator will be installed this winter for sure.
