Is there anything special I have to do when jacking up the car to remove/install a wheel?

Here's a good how-to from Renntech on jackstand placement. You'll need to sign up and it's for a 996 but virtually the same I believe.

Lifting the Vehicle with a Lifting Platform or Garage Lift
The car must be raised only at the illustrated jacking points.

I realise this. Do I need anything other than a decent floor jack?

I see these pucks advertised all over the place to place on a floor jack. Is it needed or are they for older 911s???

any jack is fine, put a wood block or hocky puck on b/n jacking point and your floor jack.
if you want a REAL jack, get AC hydrualic floor jack, very heavy duty. very very heavy too.
