Thoughts on this 2007 GT3?
There's an 07 GT3 manual for sale in Texas for 100k but has 30k miles on it.
Thoughts on this car? Is the previous owner on here?

That's what I was thinking as well. I thought price was a bit high for mileage and age.
Out of curiosity, do you think the car will hold value fairly well considering its already high miles and "old?"
The only other hesitation is that it looks like a low spec'ed car.

Wow. 30k is considered high mileage these days?
I'd be more worried that it doesn't have enough miles on it and has been sitting around too much instead of being driven.

My thought too. For a later model Ferrari, 30K miles is yaw dropper and a non starter for many of those in that market but 30K miles on a Porsche...?

For that kind of money, I'd look for one with PCCBs so you get the 6 piston calipers on the front. Then you can replace the rotors with 2-piece Girodiscs if you're planning to track it or use the PCCBs on the street. The front rotors on that car look heavily grooved, unless it's just the photo, but I'd look into replacement cost of those and factor it into your negotiation. Also, IMO that wheel choice isn't great on a GT3 from a looks perspective and you'll want some nice forged wheels so that's another $6-$7k and probably to replace the seat belts since there isn't any more red in the interior, but you could probably even swap those with someone.
Starting $10k too high already and needing another $10k to make it the way I'd want it would make that one a non-starter for me. The CF center console is very nice though.

FYI, if you search the VIN, you get some interesting data. This car was on sale in McKinney for 89K a while back and North Houston for 87K. Carfax shows 4 owners. Lots of oil changes at 10 minute oil change, lol. It appears to have jumped around between dealers recently.

Did you check the 997 and 991 GT3 subforum? More likely that the owner is/was there than on this one.

VIN search turned up the prior listings. I just clicked to links on the google search page [First search page had the ones I noted above.] Oil changes were on the carfax. Carfax was on one of the prior dealer sites. I think the McKinney one. [if the current link doesn't show the car, click the cached version]
