Okay, I have it narrowed to two cars.

I have read that Sport Chrono is a key feature. The higher mileage vehicle has it and the lower mileage doesn't. Should I go with the lower miles? I have the higher mileage vehicle checked at a dealer in FL and it is in great condition. The CA car just came on the marker and it causing me pause. Thank you for your thoughts.

Hello, Dan...
With all due respect, select the 911 from Longwood, Florida. It would appear you have already spent resources to have the "vehicle checked" and the knowledgeable conclusion is that she is in, "great condition." So don't wait. Go for it.
Should you ultimately decide in the affirmative, I would go a step further and kindly suggest you fly down there, and personally drive her back to Manchester by the Sea.
Before you recoil in horror, consider this: The extended drive will offer an ideal opportunity to 'get to know' the subtle (and not so subtle) nuances of the car on the return trip.
Followed this advice myself, in the Spring of 2016, when I stumbled upon my 'dream 911' in Texas.
In a leap of faith, I flew one-way to Houston, then drove 'my new' 2012 (997.2) 6-MT Carrera C4S back home to SoCal. Left Houston just before lunchtime on Saturday, and arrived in Los Angeles about 19 hours later.
It was an epic journey, that produced lasting memories, which I will treasure for the rest of my life. The front of my pristine C4S collected bugs from 4 states and 1500 miles of lonely desert highway.
And like film noir scenes out of Blue Velvet, vivid images from that late-night drive still inhabit my dreams on occasion.
Drive your 911 back home, Dan. It may seem cliche, but our greatest regrets are usually reserved for those things we were not able (or willing) to experience.

SC is a necessity in a PDK car, but I'm not sure how important it is in a MT car. My wife's 997.1 c2S has SC and we rarely push the Sport button as it actually makes the throttle response too aggressive and quick reacting for normal driving (almost like a Sprint Booster box). Other than that and moving the suspension to the harder setting, I'm not sure what else it does. My 997.1 C2S doesn't have SC, but it's also supercharged and RUF tuned so not really using the OEM DME settings so I don't have a frame of reference to compare 2 identical cars one with SC and one without.
To me, in a MT car, there are higher priority options and between those 2, I'd get the one that has more of what you want (full leather, seats, wheels, etc)

I vote for the lower mileage car with the ventilated seats. Lower mileage is always better for these cars, especially for resale. The fact that its missing SC is not a huge deal on a manual, I had SC on my manual but rarely used it.

I've just joined here, as well, after reading many, many posts over the past months (this is my first post!) It looks like we are both in the Boston area in the market for our first Porsche. What you're looking for is very similar to what I think I want, except I am leaning towards a coupe rather than the cab. Anyhow, good luck with your search!
