997 GT3 wheels on 996 GT3
I've heard good things about the Re11. But it doesn't come in an 18" size to fit the 6 GT3. Will the 19" stock 997 Gt3 wheels running 305's and 235's fit on a 996 GT3?

This tire/wheel conversion site may help:

I do really like the look of the 7.1GT3 OEM wheel much better. The 6Gt3 wheel is pretty plain. For track work, 18's are probably better tho.

7GT3 wheels specs are as follows:
8.5" et 53
12" et68
6GT3 wheels specs are:
8.5" et40
11" et63
With that said, you will need to run a substantial spacer in the front since the offset delta is 13mm. The rear will be close at it is a bit wider (1") but also a few mm delta in offset (inward) with the net result pushing the wheels out another 8mm from the stock position.
Lastly, the 19" tire size on the 7GT3 is the same up front (diameter) but the rear is another 1" taller. You will need to make sure and run the proper size rear tire.

I can see your issue. The latest crop of really sticky street tires all seem to stop at 285 width rears in 18's. (RE-11, R-S3's, Pilot super sports).
Still, I'm not sure it's worth upgrading to 19' wheels just to run these tires.
Yoko AD08's are still a really great, sticky street tire, come in a 295 rear in 18' sizes and offer great performance. I was running a set of heat cycled out Pilot sport Cup's last year and they were not really any quicker than my friend on a set of AD08's at the track.
Falken 615K's were the hot tire a couple years ago and I believe are also offered in sizing appropriate for a '6 GT3.
Then there's always Nitto NT-01's. They're not really much stickier than the latest crop of hot street tires but give up to them in wet performance. Still an option though in my opinion.

Hands down, the NT01 is the best bang for the buck tire. Great price. Great performance. Great longevity.
Only downside is they do not make the proper rear tire diameter for the 7GT3

not to go completely off topic, but a couple of friends and I were bench racing tires the other day and could not come to an agreement.
Is an NT-01 really any quicker than say a (cool) R-S3 or RE-11? Is the only real benefit of the NT-01 the ability to stand up to heat better? (not get greasy when hot). Seems like the really hot street tires are soo fast and grippy these days.
There is no argument on the budget side of things, Nitto wins hands down.

...and if you listen to the rumors most of the tread wear ratings on the really stick street tires are stamped that way just to make them legal for auto-x which mandates 140 minimum.

Valid point. I just don't have any data points on the other tires though.
My guess is they are probably a very capable street tire. For me, I'd want to drive them back to back on the same car so all conditions are constant (driver, weather, track condition, etc).
However, my days of chasing tenths are long gone so I'm just happy cruising around the track on street tires having a blast not caring about lap times.
