I used the Home Depot touch up described by Cuda for the rest of the pieces.
Personally, I didn't spray the horseshoe black, because I like how the black console lines up perfectly with the AC/Tray/Stereo.

Here is mine, all I did was have a shop paint the center console, radio surround, and the plastic sunroof button panel. I recovered the steering wheel and just want to do the airbag now as the color does not perfectly match. I also replaced the stock shifter and ebrake and all I would like to do is get blue seat belts.

the finish on all automotive and nearly all furniture leather, is paint, not dye not oil. There are very specific products that give factory quality refinish and most of them aren't even spray, they're brushed on.

What did you end up doing? Did you try one of these applique kits?
I see several on Ebay that look similar and often wondered how they turned out.
My 02 Targa came with burl walnut touches, many of which have cracked.
It needs to be totally removed and either replaced (but not with Porsche material) or painted (a much bigger project)_.

Has anyone had success with using PlastiDip on interior parts(seatbacks, center console, etc...). It looks like a pretty cool option and I saw a video of them doing a carbon fiber look as well.

My graphite grey console looked every bit as bad as yours. Took it out of the car (very easy), sanded it down by hand (a little work, but you want a smooth surface). Then used a $30 bottle of leather dye. Takes several very light coats (they dry fast) and it looks like new. Has held up very well, and if it gets a nick here and there, its easily fixed.
I don't have a pic of the console itself, but here is a pic of the passenger seat and console after dying, with the drivers seat yet to be done. (OK, I got carried away, but the results were great.)

I've had plasti-dip on various parts now for a few years. I find that waxing the surface makes it a bit more slick and resistant to fingerprints and dust, not to mention the general "grabbiness" of the product.

I used Leather Renew, #2556. HOWEVER, it is not an exact match. It is a little lighter, and while I like it a lot, the OCD in me forced me to do the door panels too. No one else probably would have noticed. I can't stress how much of a contrast it was when compared to the pre-refinished console and seats. And that's contrast in a good way.
I touch up the bottom of the drivers seat about every 6 months (this is my DD), but doesn't take but a few minutes. The console has held up very well, only needing a couple of small dabs since I did it 2 years ago.
It would be best to remove the seats, but with the console out it's not really necessary. I didn't, but covered everything in the vicinity, just in case. A foam brush, which I usually hate, worked great.

Possibly as another option, I received this ad from a Bimmer site selling a textured vinyl wrap kit (actually made by DecalWerks), specifically for interiors, dashes, etc.
