So, is it worthwhile to replace the thermostat and belt at the same time?

If the belt has more than 50K miles I would buy a new one. If it has less I would take a quick look and see if there are any cracks, etc. You need to remove the belt to change the water pump, so putting a new one on adds about 2 minutes of work. Take a picture of the belt before you take it off so you can make sure it's routed correctly.
I would not touch the thermostat unless there is a problem. Just MHO.
