personally i would go with all black. you have enough black on your dash, ebrake, shifter that the solid color would go nicely.
also, those seats look quite a bit like the stock EVO IX seats, which are seriously comfortable.

I'd look around a bit for some Porsche sport seats in Savannah Beige. Uncertain what the Racaros would look like. But one thing I do know, your upper and lower consoles would look very good painted Arena Red and the silver gauge bezels would really awsome as well.

A workable option is to buy the Sports Seat conversion kits. You use your seats and the kits high and winged bolster backs. Looks very good from what I've seen. Do a search and you'll find it, if I had a link I'd post it. The Sports seats are worth every penny, I have them in the Carrera but not the Boxster. One thing stopping me from buying a Turbo, is the Sports Seats are hard to find in a nice car that has everything else you want. (The other things stopping me, is not wanting to get rid of my car, not wanting to part with the cash, and not wanting to squeeze an extra car in the garage.)

Fergus, I believe Gert Carnewal has them in beige. Great guy to deal with. www.carnewal.com Marty Robinson got his from Gert, looked great in his car.

I wouldn't, but as mentioned, black or Sav beige would look better. But if you like them...do it.

One key difference between the Recaros Sports and the EVO version, is that the EVO version has a sprung seat bottom and does not have the thigh support. However, if you have a black interior, the EVO seats are a great bargain--you can find them for well under $1k a pair on eBay.
Fergus, matching a cloth/alcantara fabric exactly to stock leather is a several thousand dollar custom upholstery job. Honestly, if appearance is your first priority, stick with factory sport seats. The benefits of cloth are a) holds you in place much better when cornering hard, and b) much cooler in the summer. No way will they ever look as nice as factory leather, though.
