If you have a copy of the Porsche Parts List, you can get a rough idea of pricing by searching for the part number and then putting the part numbers into the Pelican Parts website. Pelican may not be the cheapest for some of the parts but will give you a much better idea of what this could cost to repair.
^^^^This.

Add up replacing all scratched parts, as the shop should be forced to do since their negligence caused this. Do NOT back down on this. They will try to tell you "oh it doesn't show...you can get this fixed for a few dollars", etc. PLUS add in the labor to do the repair, as I would not be letting the first shop do any more work on my car. Reality is that the shop will want to repair it themselves for sure, and this may be in reality hard to avoid...since a reputable shop would say "We'll make it right" in the first place.

Not that I'd let them touch the car again, but the shop is 5.5 hours from my house. So there's no way the car is going back there.

Sounds like small claims court may be your only option if they won't play ball.

We'll just have to see what happens. I can't let this go. It's gross incompetence.

I did a google search on the mechanic's name and it took me to his facebook page. Under employers it said for his last job "I fix your expensive ****." Under his current employer, the shop that did this work, it has been updated to say, "I still fix your expensive ****." Quite a resume.

Make a list of the parts that were damaged, get pricing from your local dealership to replace them. Get an estimate from a reputable indy shop as well. Tell the Bozo's they need to pay you for parts and labor or provide you with brand new dealer sourced parts (they can mitigate some of their loss by buying the parts wholesale) and pay you for labor. Whatever you do, don't let them touch your car again.

Most likely they'll forward the claim to their insurance co. and you'll end up dealing with an adjuster.

No doubt they have the usual slew of mass-produced certificates-of-greatness hanging on the walls in their reception area.

I get a laugh when I walk into dealerships (to get parts) and they have the usual binder-of-praise on a pedestal in the showroom. For it to be meaningful, there would have to be a survey of satisfaction in sequential order and number-matched to each and every work order.
