Here's what I've done...
1. Replaced the AC resistor in the drivers side wheel wheel
2. Had the system evacuated and recharged
Here's the problem..
When I push in the top AC button to operate the system, the system surges and seems to over ride the control of the fan. I can run the system with just the bottom button pushed it and everything operates as it should and I have control over the fan.
So I just double checked and my AC no longer surges. I guess I miss communicated with the service tech who recharged the system. The recharge did the trick and the system is indeed working fine!
Not to hijack the OP's thread, but since we are on the subject of AC, when I am running the AC there is a 'rattle' that comes from the engine bay area, not all the time, it comes and goes. Can't place it exactly and haven't stopped the car to examine closely, just wondering if it is a common 'aural event' with these systems.
Also when the compressor clutch engages you can sure tell...it pulls the rpm's down a couple of hundred...normal?
Engine slows down when A/C compressor starts, that's completely normal. Rattling can be due to a worn bearing in the compressor. Mine rattles a bit when engine is cold.

Well, can't say it only does it when cold...it pretty much 'rattles' all the time when its running. Guess I'll have to get off my butt and start poking around back there to see if I can 'see' where the sound is coming from.
The dryer and compressor were both replaced fairly recently, during a major service to the A/C system by a Porsche dealer, like in the last 12 months...isn't there a belt tensioner or 'idler pulley' bearing that is sometimes a problem back there? I seem to remember reading about it in a thread at some point.

+1 bearing is getting old and dry on 14+ year old compressors.
