Regarding the offset... the RS has many suspension adjustments. If it was me... I would stick with the factory size and offsets i.e ET 52 front and ET 65 rears. IMO of course

I think I will go for nr 1 :-)
Is this combination ok??
Front: 8j x 18 ET52
Rear: 11j x 18 ET65 ( Is this ok for a 265/35 tire?? or is the 10j x 18 ET52 better?
Sorry for all the questions but I just want to be sure that it's perfect!
Thanks

Larger rear rubber will increase your understeer. In my opinion, I would stick to the 10 inch/265 profile.
Good luck. (OT) I will be in Paris for my work for the next 2 weeks. Pm me if interested in meeting.

Definately the first one. You can squeeze in an 11 inch wheel on a NB if you have the rights offset, although I would not recommend it. I think David in LA is running 11x18" Gemballas in the rear with ET52 and rolled fenders.. I would personally go for the 10x18 ET 52 if you must choose between the two. Out of the two pics you first posted, I would go for #2! Good luck.

I have 10x18 rears with 52 offset and I have 285/30 track tyres. Rear fenders are rolled and I have -3 camber.
I'd go with 8.5" (ET 46) & 11" wheels (ET 40) and 245 & 285 tyres (especially if you track the car).
That 11" wheel will be tight (won't fit as 11" with 52 ET) so you want to measure first and be prepared to roll the fenders.

I have a very good deal on the Gemballa wheels, that's why I would like to choose between those 2.
Finding the correct sizes is apparently not an easy task! :-)

Are you set on using those tire sizes? You could be more aggressive and go wider if you wanted to. But if you are going to run 265 rear tires then you should not be using 11" rims...10" is already stretching it. And for 225 fronts you should not use a rim wider than 8.5". From the list you posted above, I would go with 8.5" ET46 and 10" ET52.
