How much weight would be saved by replacing the factory motorized mirrors with say, carbon fiber Ruf ones?

I could give you a pretty good idea in a couple weeks when the CF 935 mirrors go on to replace the stock ones. Guessing 7-9 pounds?

I should have the car right at/near 2740 in a couple months. Im very excited to get the G50/31 in the car and see what she'll do in the next couple weeks.
