Fast forward a couple of years and this debate will be about green, since that seems to be the trend Porsche is pushing now. But as others have said, just get what you actually like vs trying to game theory a colour’s future popularity.
Porsche needs a nicer blue as a regular series colour on the 992. I like Gentian, but I don’t know why they abandoned night blue or other more subtle darker blues. You now have to go PTS to get them, and then Porsche will probably wait a couple of years and do a “neo” version that isn’t PTS.
Also, I loved my 991.2 GTS in chalk, and probably got more compliments on that car than any other I’ve owned.
I ordered this P 992 GTS in...chalk and I love it. That's the most important thing, I dont care what other people like or dont like. Do what YOU like in life.(of course dont harm other people)

She is super beautiful. Made for you and not for others.
I get a lot of compliments on the color. I originally wanted Gentian blue, but I bought my car preowned so I did not spec it. I am glad I have it now. There are a lot of blue and white Porsches around and I feel my color is a little different.

My 992 is GT Silver, but I have a Cayenne Coupe in Chalk and like how it stays clean longer. I liked it enough that I just ordered a Macan GTS in Chalk to replace the Cayenne Coupe.

Your car looks spectacular. The blue hood is a really nice touch.

The majority of colors in the 911 (non-PTS) palette are dime a dozen across all current manufacturers--from Merc, BMW to Volvo and Hyundai. The 911 color range is built to encourage PTS for those who want a "different" color, which is quite frankly shameful given how much these cars cost. The Taycan palette is far more interesting.
Having said that, I'm of the belief the 911 makes the color and not the other way around.
