I don't think anyone is arguing an analog tach is "so good" from a technical standpoint, but rather an aesthetic preference.
I’d like to know the response time of the digital tach vs. analog. Is there a difference? Is the digital one more laggy? If so I have a problem with it.

Analog tachs haven’t been mechanically connected for a long time. I would be shocked if the digital tach was not much more accurate.

the focus on this digital tach is so incredibly stupid. The entire car is digital. 80% of the gauges in the 992.1 were digital. You aren't coming out of a 993 into this.
Its just like the dopes that call 991s RAW, where as 992s are just too cushy.

While I love the look of analog dials, I’ve gotten used to riding my motorcycles by sound/feel such that I don’t glance at them very often but I find the digital display info useful. Likewise I drive my cars more by sound and feel but obviously look at the display for critical info. As such, I don’t think the new 992.2 display bugs me as much as the start button.

No-it is not relevant which Rolex we are talking about. All Rolexes are less accurate than a 20 dollar quartz watch in the short run-- which is the lifespan of a 20 dollar watch.
As for the analog dials, I would prefer either all analog or all digital. However the digital dashes do offer more info and more diverse looks.
