Manual difference between cold and hot
When my car is cold, The transmission is a bit notchy and has a little resistance going into 1st and 2nd gear. I wouldn’t say it’s bad - it’s just a notable difference compared to when the car comes up to full temp. Is this normal, or a sign that fluid needs to be changed - or is there better trans fluid available that would resolve? Car has 9K miles and is new to me, so I can’t really say if it’s always been like this. Also haven’t driven other manual 992s to compare.

That's normal.
I never go into first unless I'm at 4mph or below so that's mostly a non issue though.

Edit-just realized you may be talking about downshifting into 1st.

I do the same thing. Could be my old driving habits from early 2000s cars, but I never shift into 1st unless at a complete stop. You can also give it a light blip which should help it go into first.

in general with any MT its good to baby the shifts till the gear box oil warms up .
You will notice 1st-2nd is notch y when cold.
The 7sp in my GTS is better cold than the 6 speed in my 3.
Warmed up they are very close the 3 has a slightly shorter throw.

Perfectly normal and this is the case with many manual gearboxes. The gearbox fluid is much more viscous when it is cold which gets the gearbox internals to stop spinning more rapidly after the clutch is depressed. Double clutching and blipping the throttle can help with gear engagement by spinning up the gearbox internals.

When my 991.1 is cold or first drive of the day, I double clutch after 1 st gear in to 2nd, and as a habit double clutch when down shifting in to 2nd gear. When I had my BMW 2002 years ago it preferred the double clutch to second gear, and now it's a habit. No crunching.

On my 2021 4S 7MT with 16K miles the first few 1st-2nd shifts
on even warmish days (like 40-50 deg F) requires patience or you will get a
definite clunky/grindey shift.
I don't double clutch it....I just go very slow, make sure I fully depress clutch
before and wait some extra time before starting the gear level movement.
The gear lever movement is slow and sort of in 2 jerks.
First jerk is to pull from 1-almost in 2nd until you feel a little resistance.
Then hesitate a little and firmly but slowly engage 2nd fully.
Nearly every manual I have ever owned has done something like this
with the exception of a (sold long ago) 2007 Honda Accord V6 6MT which was butter
smooth everywhere at any temp and my daughters (sold long ago) 2008 Honda Civic 5MT
which wasn't as smooth at the accord but was still very nice.
I haven't driven a Civic R or a Golf R manual but my understanding (from coworkers)
is that they are also extremely smooth.
Now my (now sold) '17 Subaru STI 6MT....that thing took multiple miles of driving before it would do 1st-2nd smoothly.
