Not all of them. I need the “sync” button every time I drive by myself after my wife is in the car because she always changes her temp. It’s annoyingly only in the touch screen.
On the Taycan, it’s also in the touch screen (because everything is in the touch screens), but it’s an additional screen and the sync button is always available. It’s much more convenient.
So, it’s not all about touch screen vs buttons; you can have well implemented touchscreen controls (not everything on the Taycan is well implemented, but sync button is an example that is).
You can add the HVAC sync button on the configurable PCM screen. I have, for the same reason as you.
My PCM main screen is divided in three sections: on the left I have buttons for HVAC Sync, HVAC A/C, Auto Start/Stop and Aero deployment. In the middle navigation view. On the right, entertainment view.
Works great for me, everything I need regularly is readily available.

I’m always in CarPlay, (for Waze), so anything that I have to go through the PCM for is extra buttons. I have HVAC on my left home row, so it’s one click for HVAC, one click for sync, once click for CarPlay. Moving it to a configurable PCM screen doesn’t save any time. Sync is a button I can just always access in any other car I’ve had with dual zone climate.
And I was mostly just commenting that they aren’t all physical buttons as was stated.
If you press AC Max, then immediately press Auto, Sync is activated. In my Spyder, there's a Sync button, for some (pick you own adjective) reason, there is no Sync button in the 992. I discovered that AC max activates Sync by accident.

While I am not a haptic touch screen fan, do any of you wonder how many buttons and/or switches there would be if all of the functionality in the PCM were ported over to physical buttons or switches?
Probably look something like this ...
This is a sports car, maybe it would look more like this:
