For me personally, I wish my 2020 light package was different colors like the 2021 and I would have liked to have the extended range tank as well.
I also think the GPS functionality of the Front Axle Lift system is a very nice improvement.
On a cringe worthy side note, EVERYONE gets to be aggravated in 2021 as Comfort Access is now standard.

Probably been discussed, but it really seems like Comfort Access Unlock on Approach and GPS Axle Lift could be software retrofits if you already have the hardware.

That would seem reasonable...although had my car in for door rattle fix (it was the actual handles buzzing, not Bose or other rattle; now fixed) and to have a look at Comfort Access flakiness and there was no software update to apply (mine is a Jan/2020 build).

There is mention that the "luggage stops" on the rear of the back seats were removed for '21 coupe models. I'm hoping they are included still in the '21 Cab versions. When they are released, can anyone with a '21 Cab verify if they are still there or not.. Thnaks.

These actually were removed a few months ago... if you look at 2020 cars at dealers now, none of the coupes have them. So a recent 2020 cab would probably answer your question.

Not sure if the change is an Increase or decrease in offset, it only mentions an “adjusted offset”;
“The following optional wheels now have an adjusted offset in the front from the previous ET53 to ET50 for a more aesthetically pleasing flush look
