I tried this and though it's ok for music, it fails with the BT phone function.

Yeah, phone connected to the PCM and audio to the receiver. I am using a cheapo taotronic BT receiver. Never had any issue so far except for when my phone BT driver crashed.

No issues with iPhone 5 or 6 and BT. When I first got the car (2014 model) with SWV 4.73 it seemed to have some problems occasionally. With update to 4.76, no problems in over a year of very frequent use.

Any update on this issue?
I just joined the modern world started using my phone (also an S7) for music yesterday in my '12.5 C2S. The PCM has always recognized the phone for calls, but I had to delete/re-sync the phone to get music to work. I got in the car today, and it once again would not play music via Bluetooth; the message was something like "insert CD" when I hit "AUX"
Also, I noticed that the radio settings (bass, treble, etc.) were all back to "0"...
I have the Bose stereo, but always left a classical radio station on low volume while enjoying PSE

The Fat Kid, I also have a 2012.5 C2S and I have the same problem as you. BT Calls always connect, but BT Audio fail 50-60% of the time. If I disconnect my phone and re-connect it, it works 80% of the time. Sometimes I just have to delete the phone from the PCM and pair it again.
I found out after a while that if you have the Audio APP (Spotify, pandora or Android music) open before getting into the car, it works 99% of the time. The only problem is that I never remember to do this, but when I do, it works.
My P-Dealer told me that I have the latest PCM updates (v 3.41).

Just for testing, make sure the app is running up-front and not in the background.
I have an Acura RDX and the Bluetooth works 100% of the time. Paired the phone the first time and it never fails. And when I get into the car it defaults to BT. My 911 defaults to FM and I have to manually change it back to BT.

I think this is what others are saying, but just in case.
Phone: no problem
Music: I have discovered I need to start the music on the Phone first and then use the 'source' button to connect to BT once my phone is streaming music.
if I just hit 'source' first it fails to recognize my phone for music 75% of the time.

In my case, I just open the music app. I don't actually start playing any music before. Still, it fails 20-30% of the time, but without opening the app first, the rate failure goes up to 70%.

In my 991.1, my iPhone 7 Plus always autoconnects without issue. Shortly after that, my PCM will flash, “Aux BT Connected” when it is ready to stream from the Music app, Pandora, or TuneIn radio. Note: same behavior with ios 11 public beta.

Ok, I have a few more data points.
The music app must be playing before the car it turned on, or the phone must be disconnected, music turned on, and then reconnected. Otherwise the car sees the phone only for calls.
Kind of a PITA, but at least this seems to work consistently.
