If you go back into a 964, or even a 993, here's what you will notice coming from a 991:
* Its small
* The build is primitive
* Its slow, very slow
* Its noisy - but that's not necessarily bad
* Lots of fun to drive
* Will absolutely bite you if you drive it hard and don't respect the old 911 handling
* A/C is marginal at best, radios are tin boxes.
The romance of these old cars is usually better than owning them. Old is Old.

Lots of fun tho.
And you left out the great smell of all that oil.

Burning Brakes
Very true until I acquired an AC kit from Kuhl, rebuilt the compressor and installed the new hoses. OEM hoses bled refrigerant as they became porous and recharges never held. Not very hot in SF Bay Area but AC works reasonably well and has not required a recharge for quite some time.

Agree with everybody here - keep the 991, but maybe add a few mild mods? And disable the nannies once in a while.
I DD'd an NA Miata for many many years (slowly modded with race suspension and Flyin' Miata turbo), which was great when I was in my early 20's but eventually it became a major chore with no ABS, sitting so low that your eye level is about on par with most other cars' tires, and the noise and comfort level that's not much better than DD-ing a motorcycle (done that too).
A modern 911 is great because it still feels like a proper sports car but also provides enough comfort/luxury to make it a very very nice DD.
For ultimate thrill nothing beats a bike though. I have my Aprilia Tuono for days when four wheels just won't do.

I love my 993, but if I could have only one car, it would be my 991 GTS. If you can have two, find a good 993. Although the 993 has power steering, it retains great steering feel. The rear suspension is also the most forgiving of the air cooled cars, and the air conditioning is reasonably functional. There's a reason the prices have gone up so much - it's a beautiful design and feels like the dimensions of the original 911 inside, plus modern-ish and livable. And it makes great air cooled noises from the back. The only driver aid is ABS, which is handy. As for the stereo, you don't need it. Never turn it on.
It's good to have as an experience if you have the luxury of space, time and money.

I agree with Larry, who agrees with BradB, who agrees with LexVan.
