Default Over-heating Again

Anyone had this over-heating scenario or any advice appreciated, other than make sure you extend the already extended warranty when it runs out next month.
My nearly 4 year old 991.2S over-heated, was recovered to OPC Hull and was diagnosed and replaced water pump last February. No problem until it happened again in June. Couldn't find anything wrong this time after spending a lot of time (they said) and overhauling all valves, etc. No problem since until today.
10 miles from home and the overheating warning to stop came on again. It reached 117 degrees. On stopping it cooled down to 90 rapidly. Then when I took off again, it shot back up after a mile. I stopped for 20 minutes, took off again and all was fine for the 10 miles back home, stayed at a steady 90.
This is now a big risk if we ever get to do a long run again. When it goes back in next month for it's MOT and 111-point check for warranty, what should I tell them to check or replace before they tell me again that they can't find a problem. Something is presumably sticking, but what?
Any help appreciated.

Is getting air in the coolant system a likelihood when because of Covid I've been under-using the car these days, just taking it out once a week for a 50 mile blast to heat up the oil?

Looks like a change over valve ( COV) as your water is hot , but the oil is not.
The oil transfers heat to the water so that should get hot first.

Not on these cars. Water temp will get to 180-190 rapidly with oil temps still well below 100 deg F on a cold start. Oil temp takes a few minutes to come up to nominal.

Think I understand. Bearing in mind temperatures here are celsius. So 90 is default for water and 90 to 110 variable for oil.

could be as simple as a sticking thermostat

Yeah I guess quite possible given it gets so little use at present.

Update. Can't find the fault so they're replacing the water pump a second time.

dealer replaced my valve block and vacuum lines while doing the water pump. no issues so far in a few months

which valves did they "overhaul"? They should have given you an invoice with all the part #'s and descriptions, if not, request one as it should be in their system. Check to see if the coolant shutoff valve has been replaced. I'm going through this as well along with way too many other folks. Did your heater blow hot air? Mine does not, which again, indicates that it's probably the coolant shutoff valve that's contaminated from the water pump leak.

Not sure. They're actually waiting on the new pump for tomorrow. I'll speak to them in the morning and update when I get it back, probably Friday.
