I had a 981 CS with all of the right options. Manual. PASM. PTV, etc. It was awesome. The gearing was bit long. Otherwise it was hard to fault the car. Unfortunately it was totaled in a car accident.
I went car shopping. Hoping to like the 718 GTS. I hated it with a passion compared to the 981. The dealer actually lent me a 718 boxster S for overnight. Still hated it. They ruined the car in my mind (powertrain wise).
I could not connect with any of the CPO GT4's I drove. Most had track time. They were awesome, but still geared tall. AND, coming from a 981 CS, and driving the GT4, there was not a terribly huge performance difference.
I did not want to play the dealer games to get in line for a manual GT3T. And the higher torque of the turbo powertrains was interesting (more fun with less room on the street)
I then drove every 991.2 rear wheel drive carrera model made. (base, GTS, S, T). The standout among them all was the T. I ordered one and never looked back.
It is super fun. Engaging. Sharp. Etc. It does not howl and bark quite like the 981 3.4. BUT it has a ton of character all to itself.

I wouldnt worry too much about the 7MT in the 991.2 range. The clutch is super stout, a good indicator is all the guys that are tuned and even some of the ones that are tuned making 550-600+ and its holding up just fine.

On the MT clutch, since the OP seems to have a concern: The reason there haven't been a slew of issues may be due to the fact that for the MY17 991.2, Porsche upgraded the design of the Manual Transmission, including a new double-plate clutch, and gear set / ring gear / pinion shaft adopted from the 911 Turbo PDK. The MT is a derivative of the PDK, as per the 991.1. The 2017 "Service Information" Technik (911 (991) Generation II), 2/16 edition, section 3.2, has additional information:

lol we are like living parallel lives. i also live in tampa and wanted a 991.2 7spd manual w/SC. only difference is that i never bought a cayman; after multiple test drives i decided it wasn't for me, and i also was willing to wait for the right one to pop up close by. ended up getting an 18 CPO from porsche jacksonville in June and i love it. The MT is awesome and you will not regret it!

Just to make your dilemma a bit harder - consider a 2016 NA MT. Very different experience and will be a touch cheaper (presumably) than a '17.

Lots of great comments here. I just wanted to add to take into account the weight difference and the engine location. I’d be sure to drive a number of 911s before you invest more time into investigating buying one. When I was shopping for my 991.1 MT, I decided to drive a new 2020 Cayman MT just to see what it was like. Completely different than the 991s, at least from my perspective. Neither is better, just different. The location of the weight and the amount of weight do play a difference in the overall experience. If you’re a fan of the mid-engine layout and prefer the lighter (albeit slightly, depending on spec) weight of the Boxster/Cayman cars, the 991s may not speak to you. I’d give a few 991S a thorough shake-down to see if they’re for you. I’m happy with my 991.1 C4S MT. The cayman was cool too, but I just connected with the C4S more.

I traded my 2017 718 C2 for a 2017 911 C2 in May. Both manuals. Happy with my choice:
Quieter cabin, better engine note, better looks, more power, love the rear seat storage space, availability of sunroof and roof racks. 7th gear allows for highway cruising below 3,000 RPM, which in the cayman droned... and droned.
I thought I would be able to fool friends and family by swapping a guards red cayman for a guards red 911. Jokes on me... most noticed the difference right away, the Carrera has so much more presence.
I was surprised at the Carreras lighter clutch engagement. Definitely easier to get into first, especially with air conditioning on!
No regrets here.
