991 Without A Sunroof
I wanted my C2 to be as performance oriented as possible so to me that meant; GTS package, PDCC + SPASM, RAS, MT, 18 ways, and of course No Sunroof!

I've had 3 991s. a .1S with a metal roof, a .1S with a glass roof and a .2 GT3 without one. Don't miss it at all. Like someone else said, the only thing I used mine for was to eliminate buffet with the windows open, but the window triangle things work for that.
Love my glass roof. Makes the car feel very open and airy (in a good way). Never had any issue with it.
To me the biggest benefit of the sunroof is a functional one. With the windows rolled down the 991s have HORRIBLE buffeting in the cabin. You have to buy the (kinda tacky) winglets to put on the window triangle to lessen it. With a sunroof all you have to do is crack it. No more eardrum-shattering buffeting.

This really depends on how you use the car and where you live. My 991.2 C2 is a daily driver and i live in an area where we get a lot of cloudy weather. So getting extra light in the cabin is really nice!
For me the sunroof is more about getting extra light into the cabin than for opening and getting fresh air.
If the 911 was a track car or a weekend driver, I'd probably do without the sun roof. As a daily driver in this sort of climate, the sun roof is great.
