My 991.1 is Dark Metallic Blue (which was replaced by Midnight Blue) over Espresso/Cognac. It's a beautiful and very classy combo imo. Pics here.

I also have espresso/ cognac. Love how it looks with my GT Silver exterior.
I use Gyeon leather products. The have a great cleaner and conditioner for this type of l Natura leather. Keeping clean is not difficult with the cognac. The lighter colors are a b$&ch.

Personal preference of course, but there is a story behind it for me . . . I owned both a 996 and 997 Targa (those were the big sunroof models). When I ordered my 991, my dealer gave me a Cab to drive for a couple of months while I was waiting for the new car to arrive. Within a week, I called him and told him to change the order to a Cab. I admit that the Targa is the best looking 911 model, but the Cab offers true open air driving and that's what I've to love. I'm not trying to convince you one way or the other, but try to take a Cab out for a day. You may discover the same thing I did.

I agree, one needs to drive them both. I did and I picked the Targa. Be sure to drive them fast & slow and with the windows up & down so you get a good idea of what to expect. I also added the AWE wind diffusers to help with a little buffeting but seat position affects that to some extent.

I have Espresso Cognac in a Midnight Blue 991 GTS and love it. The Cognac is much darker and richer than tan. Only problem with my car is that it was ordered with the steering column casing in leather and they forgot to put in the deviated stitching. My car is a coupe and my previous 911 was a 991.1 cab and the exhaust sound with the top down was great - can't hear it in the coupe and sort of miss it. I don't think that the targa is any better.

Yes it is - I can hear the exhaust a LOT better with the top down as opposed to being up, especially with my Soul high flow cats.

I'll be the dissenter. See it in person. Personally lived with it for a few days thinking it would grow on me. It didn't. Got worse. Luckily sold the car for break even.

By far my favorite interior in the porsche lineup, especially dark blue 911. I don't own it but I have seen a few cars with it and it is stunning. I would buy that car.

I had this combo in my Cayenne TT. The exterior was dark blue metallic. I loved it and had more compliments on this color combo than any other color I've had.

BTW how is it to keep clean?
It’s not difficult to keep clean. No harder than any other interior.
