Rear seats would not make GT3 soft. They would not change anything from the driver's perspective, unless you are driving from the rear seat, that is .
It's funny how being bad at being a car is often equated to being good at being a sports car. There are not the same things - sports cars are about telepathic steering, great throttle response, a suspension that's predictable and does not go out of alignment or overheat shocks when you use it as intended, seats that are comfortable when pulling 1.3G+ sideways etc. Being punishing, impractical or unreliable does not make a better sports car.
Also, current GT3 is plush enough that a pair of seats in the back would fit right in. I daily drove mine to work and shopping on the Bay Area roads for over 2 years, and I have aftermarket bucket seat with almost no padding - basically like sitting on a floor - and a roll cage in the back. It's still a huge and comfy car. No rear seat is just posing.
BTW, I'm most likely going to sit out the 991.2 GT cars and replace the GT3 with a dedicated track car + 991.2 Turbo S. The GT3 is neither practical enough nor "racecar" enough, so hard to find a good use for it (for me, your mileage may vary). If it had rear seats, I would have kept it.

.2 GT3 is not remotely soft, but a touring edition is mission creep. BMW M-division comes to mind.
Wingless 911 with backseat and GT3 motor sounds great. But deleting the wing and making concessions to back seat passengers changes what the car is about. Doesn't make it a bad car. I'd seriously consider buying the thing, actually. Just give it another name.

I would want this theoretical car, but I also don't see the point of watering down the GT3 name. I mean, GT4/3/2 these all mean something in the context of the track. I could care less about the name. I want:
- NA 500 hp motor
- 6 speed transmission from the R
- suspension setup from GT3
- body work from GT3
- no wing
- back seats sure, not a must (since if a car doesn't have back seats, you can legally put kids in the front with a booster in many states)
The 911R is mostly that, but it is not the GT3R or anything confusing. Call it the 991P for poser for all I care--I just would love the chance to assemble a car from the various parts Porsche has laying around and pay them MSRP for it.

The 4-way Ohlins in my cup make it feel softer than a street 991 GT3 over curbing. Do I have to forfeit a Man Card since I prefer grip over ***-chattering bounce? I also put a seat in the cup where there was none. Call me weird, but I like having a co-driver.
In all seriousness, I know we are dealing with a 'form follows function' debate here, but I kind of like the stealth / underdog approach. So you have a touring car that can pull 1.3g's? A nod to you, Mr. Bond.
