So I think I have it narrowed down to the GMG and Sharkwerks center exhaust bypass systems.
I've been told that deleting the side mufflers isn't advisable because apparently doing so robs the car of torque. Yet there are systems from very reputable vendors like BBI that do just that so I'm not sure what to make of it. Maybe one can remove either the center or the side mufflers without affecting the torque but not both? I just can't make sense of it.
Anyway, assuming I go for a simple center muffler bypass, is there a way to make the valves in the side mufflers stay permanently open? I want the sound to be consistent along the rpm range, and from what I gather, even in Sport mode there is some valve interference up to a certain rpm threshold. Is there a trick to keeping them open or some widget that one can buy to achieve this?

I would be happy to go over your options on the phone as this is something that we deal with everyday, customers looking for different results and how we manage those expectations.....
In fact, we have 2 very nice PTS RS's in the shop today getting our exhaust system, one with headers and the other most likely the just the rear center section. We don't recommend the side muffler deletes unless the car is primarily used for the track and you don't mind losing the sport button, as that will make it extremely loud and you will lose some low end torque.
We came out with our first system back in 2007 for the 997.1 GT3 from many years of racing and working with Porsche Motorsports....

There are a few Dynos floating around for the new RS with side mufflers deleted and the cars do not lose low end torque. In fact they pick up low end torque. Top Speed Motorsports dynoed Ryan H's green RS with GMG side deletes and center and it picked up horsepower and torque throughout the entire range. Dundon setup which removes sides also picks up power and torque everywhere.

I agree, switched from akrapovic full system to DMS headers, got more HP and TQ than Akra.
Sounds better too no drone and PSE button works as opposed to with Akra. it did not (and to add DMS headers are very well priced compared to Akra.)

I agree with above! my installer says it sounds unreal and no CEL so far! not once!
he works with the factory race team and his comment was "wow" you can feel a difference and the sound is insane!

I think i have 1500-2000 km since instal and no CEL either but to be fair i got no CEL even with Akra.

I would be concerned with anyone choosing an exhaust system without cats as a CEL is certain to become an issue. And I know the dealers in our area will not warrantee an engine that does not have cats on the car but we have had some of our client's cars engines replaced when they had our GMG headers installed which have a high flow 200 cell cat.....
