Two friends have SW rear bypass using the std exhaust tips. With Open valves, their cars sound higher pitched and Ferrari like in comparison to my GMG. It has larger outlets that fill the center section better ( personal preference) and it also has a deeper growl. They both sound good just different.

I have the same exhaust (Mbrp) on my gt3. It has a deeper and throatier sound compared to sharkworks or stock exhaust. It sounds great. Try Vivid motor sports for the best deal. It's powder coated in black, has larger exhaust tips (4 in), and weighs 12 lbs vs 20 for stock muffler. The exhaust tips stick out a little more than stock, but gives it a more aggressive look.

Sounds awesome and great build, using really solid material. Some of the other ones are much thinner and believe when I tell you, my friend and I bought exhaust bypass from a very reputable company for our 997 GT3s which were using thinner material and we both develop burns hole right thru the roof of the bypass.

I put the Akra Evolution system on and couldn't be happier. Build quality is without comparison and sound quality is awesome. 30+ lbs savings on weight. I do not have before and after performance data.
I have been adding Akra systems to my bikes and cars for the past 12 years...never had an issue and always pleased with quality and sound.
If you are looking for LOUD, Akra is rarely the system to go with...they tend to produce a nice quality sound that is louder than stock, but not extreme.

So I think I have it narrowed down to the GMG and Sharkwerks center exhaust bypass systems.
I've been told that deleting the side mufflers isn't advisable because apparently doing so robs the car of torque. Yet there are systems from very reputable vendors like BBI that do just that so I'm not sure what to make of it. Maybe one can remove either the center or the side mufflers without affecting the torque but not both? I just can't make sense of it.
Anyway, assuming I go for a simple center muffler bypass, is there a way to make the valves in the side mufflers stay permanently open? I want the sound to be consistent along the rpm range, and from what I gather, even in Sport mode there is some valve interference up to a certain rpm threshold. Is there a trick to keeping them open or some widget that one can buy to achieve this?

With that said, all options besides headers are for sound only. So if that's the case, at least eliminate the side mufflers to drop weight and heat. If you want to keep the valves, choices get narrower and require a full header system.
Nothing more money can't solve.

Every vendor is a snake oil salesman to some extent (just wait, one of these guys will attempt to subtly discredit me for saying this).
My opinions:
Sharkwerks - Best customer service by a wide, wide margin; had their bypass on my 997.
GMG - Pricey vs Sharkwerks, but I bought mine used; I prefer the sound of GMG vs Sharkwerks on both 991 and 997. GMG is deeper tone, SW rips at the top but sounds less aggressive overall IMO. GMG customer service is better than it used to be, and it's not like much will go wrong with a ~20" long steel pipe anyway.
You can "unplug" the lines that actuate the valves so that they are forced open at all times.
If I were a baller like you I'd go all in and get a Dundon Motorsports setup, though.
