That is some high quality work. I've got the Utopia Ms and JL VXi amps in my daily but nothing elaborate like this.
Question: what would be an ideal car to do an aftermarket stereo? something that's already super quiet from the factory like a S class?

So ideal car... Well, that kinda depends. Different people have different goals, and those goals will determine what car is best. For starters, a car that is well built is important. An interior that is loose and rattles/resonates is going to be detrimental no matter what your goals are. This brings me to one specific goal and ideal car.. If you want something where you do not want to see anything, and can live with not having crazy levels of bass, a 991.1 is actually a great option. Simple, yet highly effective due to varying reasons but one of those being OEM locations that work pretty well, and an interior that is rock solid.
Another direction is ***** to the wall, pure sound quality... I had a 2011 Nissan Versa hatchback that I built for a customer and eventually bought off of him. I'd be hard-pressed for anyone to find a better platform if there were no rules, no limitations. That reminds me.. Hatchback is better than a car with a separate trunk for similar reasons. Trunk cars have more resonance and rattles, and while not severe, cause some issues with bass reproduction. Speaking of your S Class suggestion, we did an S65 AMG Coupe recently. Its a good, but not great platform. Obviously quiet and well built, But there are other things to consider. Here is the build log for that if you are interested..
