Burning Brakes
You can turn it off by not pressing the foot brake as hard. Hill hold only activates when the car is 1) In gear, 2) Clutch all the way in, 3) Foot on brake pedal with force (similar to how launch control works), and 4) On a steep enough grade. Just don't stomp on the brake as hard and hill hold won't activate.

+1. Take off with hill hold engaged is tougher than without since you need to overcome the incline and the brake. With a lightweight flywheel and clutch package its embarrassing - stall or racing start on the street. I wait until the assist releases and the car moves before taking off.
