I bought a 2014 Cayman (base) with about 9.8k miles. It’s now a bit over 13k. I have two questions….
1. I just drove about 200 miles, mostly cruising at 80 mph, a time or two I went up briefly to 95. On returning home and getting out the car, it smells like something burning…burnt smell. I had the same smell the last time I had taken it on a long ride. Initially, I thought they might have spilt some oil during an oil change about a month ago but it might be something else since the smell is still there.
2. On the picture, the 2nd line, showing 198 now goes way higher over 250 on long drives. In the morning it’s way low, like 40-50. Is that normal? What do each line indicate? What are normals for each?

The top line is water (coolant) temperature, middle line is oil temperature, and the bottom line is oil pressure.
At cruising speed, assuming you're not going uphill, the oil shouldn't heat up to more than 230* F or so. 250 or higher is what you would see on a race track.
Slight burning smell is generally normal on these cars, but could be a concern given higher oil temperatures.
What temperature do you see on a regular ~1 hour drive at highway speeds?

Activating sport mode will cause the oil temps to go down a good bit by design. Oil temps will be highest when driving in normal mode, as hotter the oil means better the fuel efficiency .You will be warned if anything goes over their limits, so all is fine.
The oil temp starts out at 40-50 because that's the ambient temp of the oil wherever your car is parked before it heats up to normal operating temp. Mine will run 215-230F on aggressive twisty mountain road driving when in Sport or Sport+ modes, and about 180-220F on the highway in Summer, also always in either Sport or Sport + mode.
The top coolant temp is buffered, and and will lock to 194F and stay there despite the water temps being about the same as the oil temps in reality. It wont go higher than 194 unless something is wrong and things start to overheat

I would be concerned, especially if oil temperature on earlier long drives was at 198 and now they are going to 250. That kind of change is indicative of an issue with either cooling the oil or perhaps an inaccurate oil temp sensor. The fact that you "smell heat" when you haven't before is also indicative of a change that is probably related to the high oil temps. As a comparison, I have a 2014 Cayman Base and have taken it on several 100+ mile trips with sustained speeds in the mid-80 MPH range, often on days when the ambient temperature is 95+ F, and have never seen oil temperatures that high. I would check further.

I bought my car for long distance driving…..about to leave in the last week of April for a drive from the Midwest, up to Edmonton, AB, Canada (1800 miles) and after two days rest, drive another 1800 miles to Alaska. Expect to drive some 7000+ miles in under a month. Canadian speed limits being much lower, expect to keep speeds under 80 most of the drive. Just would hate having problems. Bought the car because it’s supposed to be very reliable!

I took a 1000 mile drive recently and in normal mode it didn’t go above 227 for oil temp.
in Sport it’s much cooler in the 190s.
250 seems high???

Highest I have ever seen on my '14 CS was around 255 and that was when I was flogging it around ECR (2.7 miles) in sport mode last summer, about 93Deg ambient.
You might take a peek in your bumper and make sure that nothing is blocking your radiator(s).
