I have been able to do this swap without removing dash. Not easy but possible. Like you said, a major PITA.

Thanks to recent posters. I am assuming that when you say "it's", you mean the sloshing sound, not the out-of-control heat, right?

There are no signs of a leaking core: smell, etc. My mechanic considered this but doesn't think it's the problem. He cleaned out the area at the end of the sensor tube: there's a small fan there. And he refilled the coolant: it was down a liter or so. On the drive home I could keep the temp control at 12:00 for the first time in a long time. We'll see: I will be immobilized over the next day or so: snowstorm.

Not sure what Chantilly is, but if it's a repair shop (and not whipped cream, LOL), you could consider undertaking this work yourself.
Sloshing: check coolant level and touch up as needed. Poor climate control: remove sensor hose and clean area near firewall where it feeds the sensor. This MIGHT be possible to do from a position scrunched up under the dash (without removing dash components).
