I know that on older Porsches, Guards Red called also Indischrot was single stage paint without a clear coat. Is it still true for the 968?
Yes, I believe so. My own gaurds red S/CS is factory original in good condition but only 1-2 microns thick (when compared to my 964 3 times that). There is on the odd panel shut-line corner the tiniest of primer showing through from previous machine compound/polishing. Hardly noticeable, unless your looking for it, but I know when I come to machine polishing I need to be mindful there's not much paint on it!
I am not sure, but on my red 968, it was many shades of red (things had been painted, some were original), but when I would clean it with Zymol HD clenase followed by waxing, everything would match again, so I am going to say it is single stage.
Do the later 968’s have single stage paint, or clear coat?
Considering a Guards Red but I always worry about oxidation on red cars. Looks incredible though.
A good coat of wax. Plus a cover if it is going to sit in the Sun for long periods. Is all you need!
If in the Sun, then you need to worry more about the dash cracking.

All Guards Red 968s (1992 thru 1995 MY) are single stage paint. If you have one where red paint doesn't come off on a rag when polishing it's been painted...
