I have a question for exhaust experts - I have a F/S cat bypass in place of the main cat, but the stock wastegate cat still installed. Is there much benefit to also putting a bypass on that one?

My Wastegate cat was contributing to overboosting in cool weather.

No performance benefit other than if the cat is damaged/blocked or otherwise somehow not functioning. A bypass pipe on the wastegate will generate extra noise on boost when the wastegate opens.
