Maybe remove the speedo but don't disconnect it. Then drive till the wing deploys then disconnect the speedo while the wing is still up. Hopefully that will freeze time and leave the wing up.
*this is just a random brainstorm, I've never tried it, so I don't know if trying ^that^ can damage something. All I know is that the wing doesn't work when the speedo is disconnected.

If you have the tools and materials handy, you can install and fashion an emergency rear release in about 20 minutes complete with photographs to impress your fellow Rennlisters.
Cable cutters, Shimano shift cable, about 2 feet of bicycle shifter cable, strippers (for crimping), and a packet of 18-22g crimp connectors
oops. No release cable installed and no screw with which to secure a OEM cable
Left tail light removed.
Needle nose pliers to fish the cable housing through the body, behind the center-rear reflector. Note 6ohm 50W load resistors secured with metal zip ties for LED tail lights and flashers
Hole behind the Shell sticker through which to fish the wire and cable housing. Metal tube is for the standerd release cable
Cable installed and housing 'stopped'. Shot a little lube down both cable housings to keep operational for a long time.
Cable housing secured and cable loop crimped in place.
