Which parts other than the carrier, hub and bearings will I need if I just want to go with the standard 993 carrier? Will I have the same issues with the struts as those with the evo uprights?

The aluminum 993 and 993RS wheel carriers are slightly thicker at the mounting boss than the steel 964 versions, so you ought to use 993 struts which have wider spacing on the mounts. Some have done it w/ 964 struts as documented here, if using the 964 struts the lower mounting bolt need to be changed to a 14mm version.

There are no issues that I am aware of using the 993RS(aka evo, GT2) uprights other than that you need the straighter outer tierod ends but yes both 993 ans 993RS are aluminum w/ the same thicker mounting boss.
