Default 944 S2 3L pistons

can 944S2 104mm pistons be used to build a 2.8l with a 2.5L crank?

wouldn't recommend it in an 8v head.

It won't give you a proper 'squish'

Squish: when the piston meets the head.
the dish on the pistons matches the heads, either 16v or 8v.

Not saying it wont work, but it wont give you the ultimate squish and combustion if you use 8v on 16v piston vica versa.

Use some steel sleeves and Chevy pistons, they are designed for 2 valve heads. I believe that's what Sid did.

a lot of people like to use the word quench instead of squish

The main thing not mentioned here is that the piston will never reach TDC as the piston sits lower on the rod compared to a 2.5l piston.
Both the short stroke (2.5l/2.7l) and the long stroke (3.0l) engines have the same rod length so the piston pin is at different heights (compression height) to put the piston at TDC with the different stroke length's.

So you would end up with a very low compression ratio. So short answer - no
