I used 3M CF vinyl. Difficult curvy pieces I had professionally wrapped (like the door woofer mounts) and the flatter easier pieces I did myself. I did use the Garage 9 CF gauge panel, their gauge trim rings, and their metal bezels for the *****.

Here are a few pics - lots more here -https://1979porsche928spyder.shutterfly.com/pictures

I agree on the carbon fiber. The point of carbon fiber is increased strength with less weight, not looks. So a CF overlay.......no clue

As for the wood I don't follow your logic there.
The most expensive luxury cars on the market today are covered in wood trim, nothing "old" looking about it. In fact, a tastefully done wood interior makes the car look more modern since the 80's into the 90's we saw a pull-back from wood interiors in favor of more blacks and grays, which now dates a care more than anything.

The problem I see with the "aftermarket" wood trim is many simply overdo it, but that boils down to personal taste.

/yes I know this is from 2012

Here is the wood from a Audi S8, S6, S-Class, Maybach, and Aston Martin (...even some wood steering wheels in there....)

I like the CF in a black interior because it breaks up the solid black with some patterned black - thats's why I did the vinyl wrap in my 928. My 997 has a bunch of real CF trim which is where I first experienced the look and why I wanted to duplicate it.

My wife's 997 has the Macassar dark wood (center consolle, shift ****, ebrake, cup-holder and dash trim) with black leather, and that looks very nice as well, but it's not a popular trim package with the 997 crowd. Our Infiniti QX56 SUV has the dark wood trim along with charcoal grey leather and we like that too.

Lots of different options out there so people can have their cars the way they want them.

Absolutely.

I'm actually shocked Jim Bailey's interior doesn't look like this:
