I suppose one could use any material for the substrate including wood. It's the top facing finish that gives the dash its character.

The burgundy one is vinyl with the 928 defroster vents installed and a center French seam.

The cork dash is sans the center seam and vents but has French seams on the ends.

 

Those photos are enough to give someone wood !!!
