Paint Type Recommendations
Long story short, my 951 got nailed yesterday and it's likely going to be totalled. I'm for the most part fine, my chiropractor will let me know in the morning what the dealio is.
It's Gaurds Red and is going to stay that original color, and I'll be doing a lot of the repairs myself (I do P-car service privately), but painting a car is not something I've done before and I'll let a pro deal with that. Sanding is not my most favorite thing
I've found a guy in the area that has unreal pricing and from talking to him on the phone, he sounds pretty legit. I've had a bad paint job in the past, so I'm going to be more hands-on with what materials to use and all that.
So I've used the Deltron stuff to paint my Baja motorcycle and I liked the way the paint came out (it was white though) and the clear coat was tough as nails (I crashed in Baja and it really held up great).
Aside from the Deltron, I don't know what else might be good. I had gallons and gallons of Spiess-Hecker paint, but it's since gone bad and had to be thrown out, but I've heard that stuff is great.
Any recommendations and experiences? Would I really see a difference between a good brand's mid grade and their top tier paint?

I used PPG 'single-stage-to-color' DCC. This is what a 951 had, as far as "type" as it wasn't cleared. I've done maybe 5 completes on German cars (Karman built Merkurs and the 928) and it is a good match for texture, gloss and durability. We have years of winter and outside storage experience with this use. The Merkurs were 'radiant red', which is darn near "Indersoit", or whatever Indian red is in Duetsch. This includes experience with urethane panels with PPG flex agent in it. These are daily drivers and have winter exposure. Red isn't cheap and you may spend nearly a grand for all the stuff. I'm sure the German stuff is great, but I know from actual experience that the PPG is good in this usage, namely no clear and in your color class. It does cover poorly and you need a lot of paint to cover any color or color variation in the under finish (the red covers poorly, black is fine). Our 928's are similar to the Karman built "Fords" as the red, black and (maybe?) white are single stage to color paints with no clear - in early years.

Talk to your painter and find out what he likes to use. Unless originalty is a concern, modern paint systems from any major supplier will be fine and look better than reshooting with original.
The chiropractor basically sent me off with a treatment plan and saying I was messed up, in more technical terms that I immediately forgot

I'd like to stay away from the single stage paint just because I really like having a clear coat, and the tip on the higher cost and poor coverage of red paint is quite helpful. Both painters I know of that I'm deciding between use PPG, so per your advice, I will use what they are comfortable with that is a trusted brand. That sounds like a very good plan. Thank you!
