What color interior do you have and what is the original color? What are your favorite colors, if you do a total repaint you would want to do all the door jams, hatch area and engine compartment which is more expensive. To do the engine compartment you will need to remove the engine and strip out all the items in the engine bay. This will be my approach.
You may want to look at a color the goes with the original so the engine bay doesn't look as much out of place.
Yellow 928

Do you want to keep with an original porsche color or go with a Subaru blue, look at Iris Blue.
You should choose a color that you like very much. Look at other cars, I've seen some BMW blues that I also like.
Good luck
Iris Blue 93-95 has a little purple hue to it, changes color in different light. Next photo is Cobalt blue which is lighter in color.

Comes down to what you like. Lots of black cars out there. Yellow would be very different, only a handfull of cars in that color.
My widebody is black but not the original color. I want to go to a different color because of so many black 928's.
If you have a black interior any of those would look good. If you want to stand realy out go for the yellow. Gray is the most subdued of the three. I also like the blue which would be my pick. My plan is to paint my car Iris Blue.
Cheers!

I've said it before and I'll say it again. Car companies hire consultants to help them choose colors for their vehicles. They invest a lot of money in it. That Subaru blue on the STi didn't happen by mistake. It happened because some consultant determined that color would be viewed most favorably on that vehicle by the largest number of people.
But just because that color looks good on the Subaru, it does not mean it will look good on a 928. It might look great, or it may make it look like a car that has been repainted, and make the styling look dated.
I changed the color on my '85. Originally it was dunkelblau. I knew I was going to paint it blue, but not sure which shade I wanted. I looked at the various shades of blue from Porsche from '85 up to about '88 and opted for Venetian Blue.
In the end, it's your car and your dime.

I love the Cobalt blue car...to bad about that '93 GTS in Cobalt blue...that one WAS a 5spd...now GONE, sadly. At least I think we have a thread on the destruction of that car...everyone weeped!
My personal choice would be (if it were a GTS that was ready for a COMPLETE color change like you are able to do now) to reproduce the last US GTS... That crazy pearlglanz green car with the VERY LIGHT GREEN and VERY PURPLE interior, OR one of my FAV colors (either Riviera blue or Maritime Blue)...
See below the last US GTS and an example of Riviera blue:
